Fit to Ride: Somebunny’s in the kitchen

Whether you’ve got a long day at the barn ahead of you or you’re trying to avoid greasy horse-show concession stand fare, Biz Stamm has a healthy breakfast burrito recipe you’ll love.

Hey there, Horse Nation.  We’ve all heard that breakfast is the most important meal of the day, so today my trusty sous chef, Pi, and I are going to share a great, healthy recipe that will help start your day deliciously.  This is an original recipe straight from my kitchen to yours, so I hope you all enjoy it.

Biz’s Breakfast Burritos

What you’ll need:

  • Two sweet potatoes
  • One small onion
  • 16 oz. Turkey sausage
  • Whole wheat tortillas
  • Vegetarian refried beans
  • Olive oil
  • Two cloves of garlic
  • Salt
  • Pepper
  • Chili flakes (optional)
  • Hot sauce (optional)
  • Plain Greek yogurt

Coarsely chop sweet potatoes and onion and place in a large skillet. I like to use two different colors of sweet potatoes for both flavor and visual effect.  Drizzle with a teaspoon of olive oil and stir until all ingredients are coated.  Mince garlic and add it to the pan. Season ingredients in the skillet with salt and pepper. Set the burner to medium and cover.  Cook until the sweet potatoes are fork tender (~15mins) stirring occasionally.

In a separate pan, brown the sausage over medium/high heat. I like my food a bit on the spicy side, so it’s at this point that I’ll season the sausage with chili flakes and hot sauce.  If I was rewarding myself for something (a good thing to do from time to time), I might spring for some high quality chorizo **drool** .

Assemble ingredients cooked ingredients and warm, refried beans in a whole wheat tortilla and roll into burrito form.  Serve with a dollop of Greek yogurt for dipping.

This recipe makes 8-10 burritos, so what I like to do is make a batch on Sunday evening, eat one for dinner, freeze the rest, and eat them for breakfast throughout the week. They reheat beautifully in the oven or toaster oven. It makes eating breakfast a no-brainer, and these hearty burritos keep me full and energized until lunch.

Biz Stamm is the 29 year old trainer and instructor of Stamm Sport Horse, LLC, specializing in pure dressage, as well applied dressage for riders involved with other disciplines. Originally haling from Hudson, NH,  She is now living in Corvallis, OR. Biz started riding lessons at the age of 6 years old when the Dr. recommended that it may help with her bad balance and lack of coordination. While she is fairly coordinated and balanced on a horse these days, she is still somewhat of a mess on her own two feet.  

Biz currently owns two horses: her lesson horse, Kalvin, a 7 year old half-Arabian gelding…

… and her personal horse, Alpha Helix, a 2 year old Kiger mustang gelding.  Biz has had Helix since the day he was weaned, and considers him her “heart” horse.

Biz is also the proud owner (more like ownee!) of a 5 year old standard rex bunny named Pi Rex Rufuse (Get it!?  Pi r-squared!!!). Biz has always wanted to have some sort of mini horse to live in the house, and since the current landlords won’s allow any kind of equine on the property, Biz opted for a rabbit, which evolutionarily speaking, is very closely related to the horse.

After getting a Masters degree in Plant Pathology, and pursuing a career in the scientific world, it became clear to her that she was only truly happy when she was interacting with, or talking about horses (and sometimes rabbits). Now that she is riding full time, Biz still keeps her scientific training close at hand, focusing on correct biomechanics and physics involved in riding.
